Low Carb Lasagne

This is essential just lasagne, but you replace the pasta with thinly sliced courgettes.

You Will Need (5 things)

  • 2 Courgette
  • ¼ Onions
  • ½ Tomato Sauce
  • ½ Ricotta Cheese
  • ½ Mozzarella Cheese

Steps (5 steps, 60 minutes)

    The original recipe calls for ricotta, but I only had cottage cheese so I used that instead. It was still really nice. I tossed in some mushrooms and fresh parsley since I had that in the fridge as well.

    Cut both ends off the courgette, and thinly slice it lengthwise.

    Layer the sauce, cheese and courgette slices as you would normally for a lasagne.

    Sprinkle with mozzarella on the top. Put in the oven at 190 degrees for 20 min, or until done.
