These Iordanov Vodka infused macaroons have crushed lavender in their shells and are filled with a liquorice white chocolate ganache.
These Iordanov Vodka infused macaroons have crushed lavender in their shells and are filled with a liquorice white chocolate ganache.
Start by making the ganache. Break the white chocolate up into a bowl.
Chop the liquorice into small chunks and place in a sauce pan. Heat gently until they begin to soften, bubble and liquidise.
Add the cream and heat gently until it begins to bubble.
Pour the hot cream over the white chocolate and stir until the chocolate has melted. Stir in the vodka.
Add a few drops of black food colouring if you want to give it some colour and leave to harden, stirring every 20 minutes to keep the ganache smooth.
Place the ground almonds, icing sugar and lavender in your blender.
Blend until fine.
Sieve the icing sugar into a bowl.
Whisk the eggs until the form thick peaks and then whisk in the sugar a little at a time.
Fold the icing sugar mixture into the eggs.
Spoon the batter into a piping bag.
Cut the bottom of the bag and pipe the macaroons out on to a baking mat. Bang the tray on your counter firmly to remove air bubbles and leave to air dry for half an hour.
Bake the macaroons for 12 minutes at 150'C.
Leave the shells to cool.
Spoon the ganache into a piping bag.
Fill the macarons with ganache and sandwich together before serving.
