Lemon Meringue Pie
This is a great home made Lemon Meringue Pie.

You can use homemade or shop bought pastry.

    Heat oven 325/160 degrees.

    In a pan mix sugar & corn flour.

    Add the milk, lemon juice & water.

    Mix until smooth & no lumps.

    Add zest & bring to the boil, stirring all the time.

    Add the lemon mixture to the egg yolks, 1/4 cup at a time until one cup has been added.

    Add the egg mixture into the pot & cook for 1-2 mins.

    Remove from the heat.

    Add the butter & vanilla & stir through.

    Pour into the pastry case.

    Combine 1 tbsp sugar & 1 tbsp corn flour together.

    Remove from the oven heat & allow to cool.

    Whisk egg whites, cream of tartar & vanilla together until soft peaks.

    Slowly add 1/2 cup sugar until stiff peaks.

    On low speed add the corn flour mixture one tbsp at a time.
