You Will Need (12 things)

  • Base

  • 6 oz Biscuit crumbs
  • 4 oz Butter Melted
  • Filling

  • 12 oz Cream Cheese
  • 4 oz Lemon Curd
  • 1/3 cup Heavy Cream
  • 2 Lemon Zest
  • Topping

  • 160 g (approx 4) Egg Whites
  • 5 oz Sugar
  • 1/4 tsp Cream Of Tartar

Steps (10 steps, 30 minutes)

    Base...

    Mix together the crumbs & butter.

    Press into the dish.

    Set aside.

    Filling...

    Beat the cream cheese until no lumps.

  3. 3

    Add the lemon curd, cream & zest.

    Whisk until it becomes stiff.

    Pour over base & refrigerate.

    Topping...

    Place a bowl over a pot of simmering water.

    Add all topping ingredients.

    Stir together for 2-3 mins until the mixture is hot (160 degrees).

    Remove from heat.

    Whisk on medium for 5 mins until the mixture holds medium peaks.

    Pour the topping onto the filling.

    Blow torch or grill the Meringue until toasted.

    Cut & serve.
