I had a ton of left over filling from making my Lemon Tartlettes [http://www.cutoutandkeep.net/projects/lemon-tartlettes] so I decided to use it in chocolate candies. I'm not good with chocolate so I went super simple.
I had a ton of left over filling from making my Lemon Tartlettes [http://www.cutoutandkeep.net/projects/lemon-tartlettes] so I decided to use it in chocolate candies. I'm not good with chocolate so I went super simple.
Line a mini muffin pan with candy papers.
Chop my chocolate and divided out a 1/3. Melt 2/3 of the chocolate over a double boiler and stirred it smooth then take it off the heat and add the last 1/3 to temper it. Put the chocolate back over the boiler on a low simmer to keep it workable.
Fill the cups 1/3 of the way with the melted chocolate and put in the freezer until set. Put about 1/2 tsp of filling in the center of each cup and cover with chocolate. Put in freezer until set. That's it!
