    I soaked my corks for a bit to, hopefully, keep them from cracking in the bottles.

    Zest your lemon, then siphon the zest into your container. This is where I used the funnel because my jars were so tiny.

    Measure out a 1/2 Cup of Vodka. It doesn't have to be top shelf but you don't want it to give your extract any off flavors and you really don't want a lemon extract that tastes like kerosene and bad memories, if you know what I mean.

    Then just funnel in your vodka on top of your lemon zest.

    Then shake it up and leave to sit for 5-6 weeks before using, giving it a good shake every few days or so. Yes, it's a long time to wait but it's worth it! Congratulations! You've made lemon extract!
