Lemon Curd Cake.
Nice sweet lemon cake.
You can eat it with or without the icing.
The recipe can easily be doubled.
Heat oven 180 degrees.
Beat together flour, butter, sugar & eggs.
Pour half the batter into a tin.
spoon the lemon curd over the cake batter.
Dollop the remaining batter over the top.
Smooth out a little.
Bake for 30 mins until cooked through.
Mix icing sugar, lemon juice & water.
Pour over the cake.
Allow to cool completely.
Cut & serve.
