Lavender & gin infused shortbread

Inspired by Shetland, this traditional Scottish shortbread is infused with Shetland Reel Ocean Sent Gin and fresh lavender for a sweet and floral treat.

You Will Need (5 things)

  • 200 g Plain Flour
  • 150 g Butter
  • 70 g Sugar
  • 2 oz Shetland Reel Ocean Sent Gin
  • 1 tbsp Lavender

Steps (9 steps, 35 minutes)

    Cream together the butter and sugar.

    Add the gin to the mix.

  3. 3

    Grind the lavender with a mortar and pestle until it becomes a fine powder.

    Mix the lavender into the dough.

  5. 5

    Scoop the dough out onto a floured surface.

  6. 6

    Roll the dough out until it's 1/2" thick and then cut into biscuits.

    Place on a lined baking tray and use a fork to press holes into the top of the biscuits.

    Bake for 20 minutes at 180'C.

    Sprinkle with sugar and top with a few sprigs of lavender before serving.
