This is smooth & creamy.

It is best made the day before needed.

You can add or leave off the icing topping but it does ad that special something to the cheesecake.

You Will Need (14 things)

  • 1 3/4 cup Gingernuts Crumbed
  • 5 tbsp Butter Melted
  • 1 tbsp Sugar
  • Cheesecake

  • 24 oz Cream Cheese
  • 1 cup Sugar
  • 3 Eggs
  • 1 tsp Vanilla
  • 1/2 cup Lime Juice
  • Icing

  • 1/4 cup Butter
  • 3 oz Cream Cheese
  • 2 cup Icing Sugar
  • 1 tbsp Lime Juice

Steps (10 steps, 90 minutes)

    Mix the base ingredients together.

    Press into a tin.

    Bake in oven 350/180 degrees for 5 mins.

    Remove & set aside.

    Mix cheese & sugar together.

    Add vanilla, lime juice & eggs.

    Mix til smooth.

    Pour on top of base.

    Cook for approx 1 hr until set.

    Remove from oven & allow to cool.

    Place in fridge until needed but best over night.

    Make the icing...

    Mix the cream cheese & butter together.

    Add the icing sugar. 1/2 a cup at a time.

    Beat well between addition.

    Add the lime juice.

    Stir to combine.

    Spread over the cheesecake.

    Smooth out.

    Cut & serve.
