Classic old fashioned meatloaf with a fun twist!
If you love bacon and jalapeños, you will love this meatloaf! Made in individual muffin tins, this is a dinner everyone will love.

  • Step 1

    Line muffin cups with the bacon, touching the edges as much as you can.

  • Step 2

    Mix up all remaining meatloaf ingredients. Form balls of meatloaf and place inside bacon-wrapped muffin tin.

  • Step 3

    In separate bowl, mix up glaze ingredients and brush on top of meatloaf cups.

  • Step 4

    Bake at 350 for about 15 minutes.

  • Step 5

    Take out the muffin tin and carefully transfer the meatloaf cups to a baking sheet. (This gives the extra grease some place to go, but the meat will have cooked enough to keep the bacon in place wrapped around the meat. If you leave it in the muffin tins, there will be pools of bacon/hamburger grease in your tin…gross!) Finish cooking until meat is cooked through and bacon has crisped up a bit more.
