Happy Vegan
Jackfruit only came in to my life in the last 12 months. I was dubious on the first try to say the least. I didn't like how it looked and was confused as to how it could feel so meaty. Now I'm a die-hard fan and love how it can appear in many guises – the perfect substitute for pulled pork, meat in burgers and even tuna depending on how you flavour it. You can buy it in a tin or vacuum pack in many supermarkets but if your local shop doesn’t sell it it’s worth seeking out a health food shop nearby so you can have fun experimenting with it. This is a simple introduction recipe to jackfruit if it’s your first try and works perfectly with the creamy slaw. Great for a slouchy, hearty meal or make in smaller portions for mini burgers if you're having the masses over.

  • Step 1

    In a large bowl, combine together all of the slaw ingredients and season well. Set aside.

    Drain and thoroughly rinse the jackfruit and pat it dry with kitchen paper. Put the oil into a non-stick pan and set over a high heat. Add the jackfruit and stir-fry for 4-5 minutes, until beginning to colour. Add the garlic and fry for another minute until aromatic. Add the BBQ sauce, reduce the heat and simmer gently, stirring frequently, for 25-30 minutes, until the sauce is thick and the jackfruit is tender. Once tender, use two forks to shred the jackfruit.

  • Step 3

    Preheat the grill to high. Toast the inside of the burger buns under the grill. Top the bases of the buns with the rocket and a little of the slaw. Add some pulled jackfruit and some more slaw on top. Finish with the tops of the buns and serve immediately.
