Itsu the Cookbook
Packed with goodness and dressed with our special spicy sauce, this salad is so healthy that you will want to eat it with everything. It keeps well, so can be made in advance, and is perfect as a portable lunch.
Serves 2 as a main course, or 4 as a starter

Nutritional tips: Carrots are a great source of vitamin A, which is important for a healthy immune system; edamame (soya) beans and tofu both contain high-quality protein and help to maintain a healthy hormone balance.

You Will Need

Step 1
Put the noodles in a bowl and cover with boiling water for 3–5 minutes, or according to the packet instructions. Drain and refresh under cold water, then set aside.

Step 2
Cook the edamame beans in boiling water for 3 minutes, then drain and refresh under cold water.

Step 3
Soak the wakame in cold water for 5 minutes, then drain.

Step 4
Put the noodles into a bowl, add the wakame, carrots, herbs, rocket, seeds, tofu and beans and toss together.

Step 5
Serve the salad with the spicy sauce.
