A nice, tasty chicken dinner.
You can add spinach to the dish if you like, do this before placing in the oven.
Coat the chicken breast in flour & 1/2 tbsp oregano, 1/2 tsp salt & 1/2 tsp pepper.
Fry in olive oil until browned on both sides.
Remove from the pan in to a baking tray.
In the pan fry the mushrooms & garlic for a few mins.
Add the tomatoes.
Fry for a few mins.
Add a couple of tbsp of flour with the remaining salt, pepper & oregano.
Cook for a min.
Add the wine & cook for a few mins.
Add the stock & lemon juice.
Bring to a boil & pour over the chicken.
Cover the dish & place in the oven 200 degrees for 20 mins until the chicken is cooked through.
Serve with pasta .
