You've probably seen t-shirt yarn, yarn made from strips of fabric. In the same way you can make yarn from umbrella cloth!

Pick an umbrella with pretty fabric.
With my umbrella, the fabric was fastened to the frame with thread. Try to cut it loose without making a hole in the fabric. In the middle of the fabric, just cut around the top of the umbrella, leaving a hole. Cut off the little 'clasp' with velcro too.
Start cutting the fabric in one of the corners.
Cut one long strip of about 2cm in width.
The seams of the umbrella might loosen when you're cutting the fabric. Don't worry about them unless the fabric actually breaks. In that case, sew it up with just a few stitches. You won't see it when you crochet or knit with it.
Keep going..
..until you've cut all of the fabric and wound it into a ball!
Now you can start crocheting or knitting with it!
