  • 4 tsp Mixed Spice
  • 2 cup Warm Milk
  • 4 cup Bread Flour
  • 2 x Egg(s) + An Egg Yolk
  • 4 tsp Cinnamon
  • Sieve

  • Measuring Jug
  • Grease Proof Baking Paper
  • Cling Film
  • 2 x Mixing Bowl(s)
  • 1 cup Sugar
  • 2 tsp Yeast

Steps (7 steps, 100 minutes)

  1. 1

Sieve the flour in to a bowl and add the cinnamon, salt, nutmeg and mixed spice. Sieve in the sugar and then mix it all together.

  2. 2

Fill a measuring jug with 1 cup of warm milk, add the yeast and leave for 10 minutes.

  3. 3

Crack the two eggs in to a new mixing bowl, add the remaining milk and beat together.

  4. 4

Add this to the yeast mixture and beat again.

  5. 5

Combine the flour and milk mixtures together, and stir in some raisins.

  6. 6

Cover with cling film and leave for an hour.

Cover a baking tray with some grease-proof paper and make the dough in to bun shapes. Make crosses and knots out of shortcrust pastry and place on top of the buns. Cook in an oven heated at 400° for 10 minutes. Remove the buns and glaze with egg yolk using a pastry brush. Pop back in the oven and cook for another 10 minutes at 300°.
