Honey Oat Bread: Project Challenge

Accepted and Done!

I was challenged by Lowe to cook something using only white ingredients. When I read it I thought it said bake... But Lowe said it still counts! Yay! So I made Honey-Oat Bread. The ingredients, for the most part are white. Yeast is kind of brownish... but could count as white??? Had a lot of fun with this. It really is nice and simple, though there are a lot of steps. It is mostly the time it takes and the waiting that makes it difficult. A lot of steps, I know.

Description

I was challenged by Lowe to cook something using only white ingredients. When I read it I thought it said bake... But Lowe said it still counts! Yay! So I made Honey-Oat Bread. The ingredients, for the most part are white. Yeast is kind of brownish... but could count as white??? Had a lot of fun with this. It really is nice and simple, though there are a lot of steps. It is mostly the time it takes and the waiting that makes it difficult. A lot of steps, I know.

Instructions

  1. Wake up your yeast in 1 cup of lukewarm/warm water.

  2. Add 2 tablespoons honey. stir.

  3. Small imag0494

add 1 teaspoon salt. add 1 cup flour.

  4. Small imag0495

mix 1 tablespoon wheat gluten with some water (runny consistency) and add 1 tablespoon honey. THIS STEP OPTIONAL!!! I wanted wheaty bread. Also, I like honey, so this can be adjusted to taste.

  5. Small imag0498

crush oats. We just eyeballed it. if you like oats then add more, if not add less. I think this was a handful. <<<not really helpful, I know. Sorry!

  6. Small imag0499

add crushed oats and some more honey if you want. Then, continue adding flour until it is kind of hard to stir, like putty.

  7. Small imag0501

Now, you have to beat it to build up the gluten. This will take a good 10 mins. BEAT VIGOROUSLY.

  8. Small imag0502

    Keep beating...

  9. Small imag0503

    Don't stop yet...

  10. Small imag0504

arms tired? mine were. Lol. okay, now add flour until it balls up/ is impossible to stir. but not too dry.

  11. Small imag0506

plop it out onto a floured surface and knead. for like. 10-15 mins.

  12. Small imag0509

keep going, you can do it!

  13. Small imag0511

knead until smooth and not sticky, but not dry. smooth.

  14. Small imag0508

    butter your bowl.

  15. Small imag0512

place dough ball in bowl and roll around to coat with butter.

  16. Small imag0513

Let sit in a warm place for an hour or so. it will double/triple in size. NOTE: the oven isn't on exactly. This day it was -2 F degrees outside so the inside was cold too.

  17. Small imag0515

    <<<should look like this.

  18. Small imag0528

dump back on clean surface and be sad that it deflated. I was. I think it is really cool when it is all puffy. Oh, and don't worry about the 'skin'. It is like the skin on pudding and will disappear during the next step.

  19. Small imag0530

    knead for ~10mins again.

  20. Small imag0532

I chose to break my dough into three balls but this is not entirely needed.

  21. Small imag0533

form balls by folding the edges under. set on cooking tray and cut shallow hash marks into top. I say shallow because they will puff up during the next step.

  22. Small imag0537

set in a warm place to rise again.

  23. Small imag0535

while they are sitting, you can add oats to the top by lightly/dry brushing the tops with water and sprinkling the oats.

  24. Small imag0538

bake at 375F for 20-25 mins. depending on the honey content keep your eye on it so the sugar doesn't cause a fire.

  25. Small imag0549

    Cat Approved.
