Get loads of water in a pot and start to boil. Make sure you make an X on the tomatoes deep enjoy to get the hot water to help release the tomato skin. Water and amount of tomato will vary depending on how much you want to make. Let them be in the boiled water for about 1 minute.
After that minute, submerge them in ice water. I waited for them to be cool to the touch to start pealing the skin. Use a small knife to help with the ones that don’t peal as easily.
Chop a whole onion And 3 garlic cloves As well as chop and clean up your tomato, you don’t want the hard piece of the steam.
In a pan, heat olive oil. Once heated, add onions and cook until golden . Add garlic and cook for about 2 minutes then add your chopped tomatoes.
Add salt to taste Oregano Basil (Optional pepper and cumin [I added it to mine] *Note all of the seasoning is add to your liking*
Once brought to a boil, bring heat down to low to medium heat. Let it cook for 1 hour.
After the hour let it cool . Then blend and can. You can add 1 table spoon of lemon juice or vinegar if you aren’t using it right away. Can be stored in the fridge for about two weeks! Enjoy!
