You Will Need

Step 1Bring the water and sugar to the boil in a saucepan, stirring until the sugar has dissolved.

Step 2Add the sprigs of thyme and remove the pan from the heat.

Step 3Leave the sprigs to seep for about 15 minutes.

Step 4Remove the sprigs and bottle the syrup for use in cocktails and baking.
