I have been planning on baking some homemade breakfast/granola bars for some time now and always seem to forget one vital ingredient whilst shopping. So, today I just said,"feck it" and went ahead with whatever was laying around. First off I will say that while the boyfriend and I did enjoy them, they were not what you would call 'bars'. They were a bit too loose, so I think they would be great crumbled into some delicious organic natural or flavoured yoghurt. If I make these again, I would add more peanut butter and bake them on a lower heat of around 150ºc for 20 minutes.

Instructions

  1. Small 6241

    Preheat the oven to 200ºc before you begin. Add the oats, sesame seeds and pollen to the tray and toast using your grill under a low heat for 5-10 mins. Stirring around.

    Get your almonds, as I had bought sliced ones and I wanted them smaller, I chopped them up into smaller bits. You could just buy chopped almonds, obviously. Pop them in your mixing bowl

    Take your raisins and chop them into smaller pieces, so they are more spread out in the bar. Pop them in the bowl

    Slice up the apple into small pieces, as you like. I left the skin on, as it's good for you. Remove pips and stem of course! You can add so many different kinds of fruit and nuts, so go crazy and experiment :)

    You should have removed the oat mix from the grill by now, so add them to the bowl and then stir in the peanut butter and golden syrup. I mixed them in with my hands, to get them all well and stuck :D Nice and messy.

    Rub some butter/marg around your tray and press the mixture into it. Bake for 10 mins, then turn off heat and leave in for another 10 mins. Depending on your oven. Mine is old and crap. Leave to cool for around 1/2 hour

    When it's cooled, turn out onto a baking sheet and cut up whatever way you like. Store in an airtight container. From what I have read, they should last a week, if stored properly.

    Now go and enjoy :) You could melt some chocolate and pour over them, then cool in the fridge overnight, if they aren't sweet enough for you ;)
