Sorry, I had some issues with putting in the ingredients: This is a homemade pie crust recipe that I've been using that works great and there is a little bit of a secret to doing this. But we'll get into that later. PIE CRUST: 1 1/3 cups SIFTED flour 1 tsp salt 1/3 cup vegetable oil 3 TBS (cold) 2 sheets of wax paper rolling pin warm day For the pie filling and topping, refer to here: http://www.artandlemons.com/2012/05/blueberry-streusel-pie.html This is a recipe for a 9" pie bake at 375 degrees for about an hour. Let's get started.

Instructions

  1. Small img 1894

First I will tell you that with the pie crust, this usually works for me when it's a bit warm, so hence why I usually make pies during the summer. But if you don't feel like making your own crust, (I understand, it's a bit more work) Go ahead and use a prepared UNBAKED pie crust and skip to step 10. So in a sifter, measure out 3 cups of flour and sift in a bowl.

  2. Small img 1897

Make a little well in the flour before adding the rest of the ingredients. In the well, add the salt, 1/3 cup of vegetable oil, and 3 TBS of milk (fresh out of the fridge).

  3. Small img 1899

slowly start mixing the dough, but don't super hard core mix it.you more or less want to mush everything together....Just enough to scrape off the sides and the bottom and pack it. Here's your secret, get out 2 sheets of wax paper, about as big as you think your crust will be, and put your dough on one sheet.

  4. Small img 1902

Lay the other sheet over and with some force, and possible holding onto the one side of wax paper to keep from sliding away, roll out your dough. You want to go from the middle and work your way around, swinging the wax paper around to get it as even as possible. The best part is then you flip it with the dough sandwiched between the wax paper.

  5. Small img 1903

As you do this, you'll find that one side gets thicker or thinner than another. And for some reason tonight's not a great night for pie crust for me. As you can see it's getting crumbly....But just cut off the ends that are getting too long and patch in the areas that need a little patching. Place the wax paper over and roll out. This way you can get it to be as even as you possibly can.

  6. Small img 1905

Once you have about the size you want, take your dish and aiming for the middle place over the dough, with wax paper underneath..... Carefully carefully flip it over so that your dough lands in your pie dish. If it's a hot day and your crust is moist, carefully peel the wax paper off. But if it's not as warm out, your paper should come off fairly easily.

  7. Small img 1907

like so. So as you can see I am starting to have cracks. Well, that's what all that excess hanging over the edge of the dish is for: PATCHING!

  8. Small img 1908

Just take off the excess dough and place in areas that need it more than others.

  9. Small img 1910

Now you're supposed to fold the edges over and then crimp. well like I said tonight's not the night, so just pushed the sides in and crimped. On a warmer night, it would've folded over nicely and then you would have a bit of a thick crust to crimp on the edges, but for now this will have to do.

  10. Small img 1911

Set aside and now for the filling !!!PREHEAT YOUR OVEN TO 375!!! I washed my blue berries first.

  11. Small img 1912

On super low heat, started melting my butter. While that's going in a separate bowl, mixed the dry ingredients together. **Just so you know, 5 cups of blueberries can be a lot, so for these next few steps I would suggest mixing all this in the biggest bowl you have.***

  12. Small img 1915

I added 3/4 cups sugar 3 TBS flour 1/8 tsp salt

  13. Small img 1916

By then my butter was ready and added that, and before adding the berries, I mixed the butter in with the dry ingredients.

  14. Small img 1917

Once that was good, I had pre-measured 5 cups of blueberries in another bowl to pour from. I poured a little at a time and stirred. Then added a little more until I got them all in.

  15. Small img 1919

So keep mixing and after a while it should I guess start looking a little like frosted blueberries.

  16. Small img 1921

When you have the berries good and covered start pouring into the pie crust you just made. As you pour try to stay in the middle. Once you have them in, with a spatula, start spreading them evenly around to fill the pie crust.

  17. Small img 1923

You should have something like this. A lot eh? But as it bakes, it should start to shrink a bit.

  18. Small img 1924

Now for the topping. In a separate bowl: Add 1/4 cup rolled oats 1/4 cup flour 1/3 cup packed light brown sugar pinch of salt 1/8 tsp of ground cinnamon

  19. Small img 1931

And 4 tbs of cold butter cut up into 1/2" thick pieces.

  20. Small img 1932

Now as you mix this, you can either use 2 knives, cutting the butter as you mix, or....

  21. Small img 1933

One of those masher things. Not sure what it's called, but I ended up using that. If you don't have one a fork can do. But you just want to mix this up until it's crumbly.

  22. Small img 1934

    Something like this.

  23. Small img 1938

Add the topping to your pie, but I had a moment of "ooh wait, let's try adding...." So I grabbed some walnuts I had and mushed those up and added along with the topping. I would suggest that you add this before you throw the topping on your pie. That way it's mixed well. I didn't....but oh well. Next time.

  24. Small img 1939

So with the oven ready to go (preheated at 375) like the lady says, put your pie on the lowest rack in your oven. This is to prevent the top from burning.

  25. Small img 1942

And for an hour, bake your pie at 375.

  26. Small img 1944

Once the time is up and everything looks good, pull out your pie!

  27. Small img 1946

MMMM, all nice and ready for Father's day. Be great with a scoop of Vanilla Ice cream.
