Chocolate or vanilla Pudding
This is a good make a head treat.
Great for using up extra egg yolks.

Step 1Whisk together sugar, corn flour & salt in a pan (off the heat).

If making chocolate pudding...
Add the cocoa one tbsp at a time. Making sure to incorporate well with no lumps.

Step 3Mix in the milk a little at a time until all the milk is used.

Step 4Whisk in the egg yolks.

Step 5Cook over a medium heat until a large bubble forms.
Turn the heat down to low & cook for one minute.

Step 6Immediately pour through a sieve.

Step 7Add butter & vanilla & stir until dissolved.

Step 8Pour into dishes & cover with cling film.
Leave to cool then place in the fridge.

Step 9Serve.
