I made these for a friend of mines birthday. They were a huge hit and so easy to make. Warning: I did use a bit of special equipment to temper the chocolate but you don't have to and I posted links to great wealths of information about tempering on my blog.

Description

I made these for a friend of mines birthday. They were a huge hit and so easy to make. Warning: I did use a bit of special equipment to temper the chocolate but you don't have to and I posted links to great wealths of information about tempering on my blog.

Instructions

    I used about 4 oz each of bittersweet and semi-sweet chocolate. You can use the regular milk chocolate, but I would add in something a little darker for a bit more complexity.

    This is the piece of specialty equipment. You don't have to use it, we just did for our chocolate. If you want to know more about it check out my blog.

    Fill your cupcake tin with paper liners. In theory you don't have to do this, but if you don't your life will be very messy and difficult.

    Mix the peanut butter, butter and confectioners sugar in a bowl.

    Temper your chocolate.

    Then place them in piping bags for easy distribution. I just used some ziplock bags.

    Put your first layer of chocolate in, trying to get about an ounce of chocolate into each cup. Then put them in the freezer for about 10 minutes.

    If you've cooled and properly tempered, the chocolate should have this nice matte finish when it comes out of the freezer.

    Fill the cups with your peanut butter filling. Yes it's ok if they look like little tiny peanut butter poops. We're going to fix this.

    Spread the filling by whatever means you have. I just used a clean finger to spread them around.

    Put more chocolate on top, again about an ounce. As you can se I was short some chocolate, which I'm sure had nothing to do with the fact that I was sampling it the whole time.

    Tap out the pan to help flatten the chocolate, freeze for about another ten minutes and then you're done! You have delicious peanut butter cups to share with friends or eat entirely by yourself and nobody ever has to know.
