Holy Guacamole & Salmon Coconut Milk Pancakes

These wholesome and holy coconut pancakes are perfect for Sunday brunch topped with crushed avocado, smoked salmon, dill and creme fraiche.

You Will Need (12 things)

  • 200 g Wholemeal Flour
  • 2 Eggs
  • 3 tsp Baking Soda
  • 400 ml Coconut Milk
  • 1 tsp Salt
  • 2 tsp Sugar
  • 1 ½ tbsp Vegetable Oil
  • To serve

  • Avocado
  • Smoked Salmon
  • Creme Fraiche
  • Dill

Steps (5 steps, 25 minutes)

    Whisk together the wholemeal flour, baking soda and salt.

    Beat in the eggs, vegetable oil and coconut milk.

    Heat a frying pan with a little butter and spoon two to three tablespoons of batter into the pan. Cook until the batter starts to bubble then flip over and cook the pancake for a few more minutes.

    When you're ready to serve, toast the pancakes for a few minutes in your Selfie Toaster.

    Cut a quarter of an avocado on top of each pancake and mash with a fork. Squeeze some lemon juice on top and season with salt and pepper. Top with smoked salmon, creme fraiche and a sprinkle of dill.
