This is a Northwest play on nocino, which is a liqueur usually made with green walnuts. I like to use roasted hazelnuts and spice it with cardamom and vanilla bean. Plan ahead, though, since it usually takes about eight weeks for it to get really good! This cordial is a lovely treat for the holidays or a cold Mist evening. MAKES ABOUT 2 QUARTS

Description

Plan ahead, though, since it usually takes about eight weeks for it to get really good! This cordial is a lovely treat for the holidays or a cold Mist evening. MAKES ABOUT 2 QUARTS

Instructions

  1. In a -liter glass jar or bottle with a locking lid, combine all the ingredients (including the vanilla bean seeds and pods). Shake well to combine and dissolve the sugar. Store the jar in a cool, dark place for  to  weeks. Once per week, turn the jar over a couple of times to redistribute the ingredients.

  2. At the end of  to  weeks, the color should darken and the consistency should be slightly syrupy. Strain the mixture through several layers of cheesecloth or a coffee filter. Discard the solids. Transfer the cordial into a clean, dry lidded jar or port-type bottle with a cork. Store for up to  months.
