Description

This is a tasty cake recipe, which reminds me a little bit of christmas because of the nuts, the dried fruit and the hint of cinnamon in it. I hope you'll enjoy it! ^^

Instructions

  1. Grease your cake pan with some butter. (I used a German “Kastenform” with the measures 25x13.5x6.5 cm; the American equivalent might be a loaf pan of about 9.84”x5.31”x2.56”, I think.)

  2. Then take some brown sugar and cover the greased inside of the pan with it. (That will become a sugar crust on your cake after baking.)

  3. After that, take a bowl and mix 1 1/2 cups brown sugar, 3 eggs, 3/4 cups sunflower oil and 1 tsp vanilla extract in it until creamy. Then add 2 cups chopped mango and stir a little.

  4. Take a second bowl and mix 2 cups wheat flour, 2 tsp baking soda, 1-2 tsp cinnamon and 1/2 tsp salt in it.

  5. Then add the wheat-mix to the egg-sugar-mix in the first bowl and stir it well.

  6. Now, add 3/4 cup raisins (alternatively dried cranberries or cherries) and 3/4 cup nuts. Mix it well.

  7. While filling the dough into your pan, preheat the oven to 356°F (180°C). Bake the Mango Bread about 45-55 minutes. (How long exactly, depends on your oven! I used a European standard oven with “Ober-/Unterhitze” (= upper and lower heat) and it took about 50-55 minutes.)

  8. The “Knitting-Needle-Test”: Test the cake from time to time with a clean metal knitting needle. Stick it into the cake. When there’s no dough remaining on the needle - when you pull it out again - the cake’s ready. ;)

  9. And then - with the famous words, that the notorious French Queen Marie Antoinette is supposed to have said - "Let them eat cake!" LOL ;P
