For this week's Dinner & Record club, we listened to Yeah Yeah Yeahs and ate halloumi burgers with a side of sweet potato wedges . Serves two!
Chop two sweet potatoes in to thick wedges.
Place in a bowl with a few tablespoons of olive oil, six chopped cloves of garlic, and generous helping of dried herbs, coarse sea salt and pepper.
Spread out on a baking tray and roast in an oven at 220 degrees for 40 minutes, shaking the tray to make sure none of them are sticking half way though.
Scoop out the center of the mushrooms and pop in the oven with the wedges, 10 minutes prior to them coming out.
Chop your halloumi in to two thick slices and moisten with water. Mix together flour, paprika and salt in a bowl and coat both sides of the halloumi.
Slice your burger buns and pop in to the toaster.
Heat a frying pan with oil and cook the halloumi for 2 minutes on either side until golden.
Remove the wedges and mushrooms from the oven. Place the mushrooms on top of the burger buns and top with BBQ sauce. Place the halloumi on top and serve!
