  • How to cook a chicken dish. Grilled Chicken Bowl - Step 1
    Step 1

    In a mixing bowl, mix together, oil, garlic, herbs, tamari and chilli.
    Pat dry the chicken and then add to the bowl. Squeeze in lime juice. Cover and refrigerate to marinate for at least 1 hour minimum.

    Next dry fry the pepitas over medium-high heat in a small frying pan. Fry for approx 3 minutes or until they start to brown. Remove from heat and pan immediately to sit aside.

  • Step 3

    Cook rice as per packet instructions - absorption method preferably.

  • Step 4

    Steam broccoli until just tender. Remove and set aside.

  • Step 5

    Heat a grill pan or barbecue plate to high heat. Cooke chicken for approx 8 minutes per size or until cooked through. Remove from heat and let sit for 5minutes. Then cut into 1cm thick slices.

  • Step 6

    Divide the rice into bowls, chicken, equal portions of broccoli, and sliced avocado. Sprinkle with pepitas and greens.
    Serve with tamari .
