Green Bean Salad

An easy to make & portable salad perfect for assembling at picnics. We made this green bean version for our Moonrise Kingdom inspired riverside party.

You Will Need (10 things)
- 2 tbsp fresh Fresh Herbs chopped
- 3 tbsp Lemon Juice
- 1 clove Garlic minced
- Salt & Pepper to taste
- 1 tsp Sugar
- 1 tsp Dijon Mustard
- 1 infused Basil olive oil (we like Nudo's)
- 1 ½ lbs fresh Green Beans
- 1 Shallot finely chopped
- Fried Onions such as French or rostad from ikea

Prepare an ice bath and put a pot of salted water to boil. Place the green beans into the water and cook 2-3 minutes then immediately plunge into the ice bath to maintain color and stop the cooking process. Alternately, you could use a basket to steam the beans for 5 minutes.
In a medium bowl, mix the shallot, garlic, olive oil, lemon juice, sugar, mustard and herbs (such as basil and parsley).
Add the green beans and toss with dressing. Sprinkle on the fried onions just before serving the salad at room temperature.
