Hummus Bros. Levantine Kitchen
A classic and all–time favourite, this salad is fresh tasting, crisp, crunchy and pretty chunky, too. greeks put a slab of feta on top of the salad, but we find that crumbling the feta helps it reach all parts of the salad and makes it better for sharing. feta is quite salty, so there’s no need to add extra salt – just season with lots of dried oregano. For an added dimension, try adding some capers and caper leaves.
Put the green pepper, cucumber, tomatoes and onion into a salad bowl and toss together gently. Crumble the feta into small pieces with your fingertips or dice if you prefer. Sprinkle over the salad with the dried oregano, then drizzle with the oil and serve.
