Greek Flavored Butter Bean Salad

You Will Need (15 things)

  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 lbs can Butter Beans (preferably no-salt-added), rinsed and drained
  • 1 English Cucumber (or 2 Persian cucumbers), halved and thinly sliced
  • 1 medium Red Onion thinly sliced
  • 32 whole Roasted Red Bell Pepper thinly sliced
  • 1 cup chopped Fresh Parsley
  • 1 cup chopped Fresh Dill
  • 10 whole Kalamata Olives pitted
  • 1 cup crumbled Feta Cheese
  • 1 tsp Dijon Mustard
  • 1 tsp Honey
  • 2 tbsp Fresh Lemon Juice
  • 3 tbsp Extra Virgin Olive Oil

Steps (3 steps, 10 minutes)

    For the dressing, whisk together all ingredients from the extra-virgin olive oil through the black pepper in a small bowl; set aside.

    For the salad, combine all ingredients from the butter beans through the feta cheese in a large bowl. Stir in the dressing.
