You Will Need (15 things)
- 1 tsp Dried Oregano
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 lbs can Butter Beans (preferably no-salt-added), rinsed and drained
- 1 English Cucumber (or 2 Persian cucumbers), halved and thinly sliced
- 1 medium Red Onion thinly sliced
- 32 whole Roasted Red Bell Pepper thinly sliced
- 1 cup chopped Fresh Parsley
- 1 cup chopped Fresh Dill
- 10 whole Kalamata Olives pitted
- 1 cup crumbled Feta Cheese
- 1 tsp Dijon Mustard
- 1 tsp Honey
- 2 tbsp Fresh Lemon Juice
- 3 tbsp Extra Virgin Olive Oil

For the dressing, whisk together all ingredients from the extra-virgin olive oil through the black pepper in a small bowl; set aside.

For the salad, combine all ingredients from the butter beans through the feta cheese in a large bowl. Stir in the dressing.
