    For the Balsamic Reduction: Put the vinegar and sugar (25 grams of it) into a pan and simmer until reduced by half, this will about ten minutes. (you can make in larger quantities and keep in the fridge for salads etc)

  2. For the Onion Chutney: Finely Slice the onions and place in a pan with the rest of the brown sugar. Then gently sweat for 25 minutes until soft and juicy. (you can make in larger quantities and keep in the fridge)

  3. Small filo

    For the Filo Parcels: Take the three sheets of Filo and brush with melted butter, now layer them all in a stack and put teaspoons full of goats cheese on the Filo. Cut the sheets around the Filo so they are about 10 cms square. The take each corner and pinch together to form a bunch. then bake in the oven at about 180c for 12-15 mins until golden

    The Assembly: Lay down your rocket leaves, then the onion chutney on top, then gently place your hot Filo parcel on top of the chutney. Drizzle with pine nuts and balsamic reduction and that's it! Enjoy!
