Gnocchi With Beef, Broccoli, Mushrooms & Ricotta

High in fibre, protein and low in fat. I love this meal after I work out at the gym because of the protein, my family loves this meal which is a bonus when your little kids eat the same as the adults, make life easier :)

You Will Need (6 things)
- 2 Garlic Cloves Crushed and diced
- 300 g Cap or swiss Mushroom(s) Sliced
- 400 g Broccoli Cut into small florets
- 3 g Extra light Ricotta
- 500 g Gnocchi
- 125 g Cherry Tomatoes Halved
Steps (3 steps, 20 minutes)

Cook gnocchi according to packet directions. Add broccoli in the last 3 minutes of cooking time, until just tender and bright green. Drain well.

Meanwhile, spray a large frying pan with oil and place over medium heat, add stirfry strips of beef and cook until brown, remove drone heat and place into a Bowl until needed again. Cook mushrooms and garlic, stirring occasionally, for 4–5 minutes, until golden. Add gnocchi, beef, broccoli, parsley, tomatoes and 1/2 cup ricotta. Stir until combined and season well.

Divide between serving bowls and top with remaining ricotta. Serve with salad.
