Glass Noodle Salad

A tasty & healthy Vietnamese style salad!

This salad is packed full of vegetables and though it might not seem like much, it's really filling and leaves you feeling a happy-healthy kind of full!

You Will Need (11 things)

  • 75 g Glass Noodles
  • ¼ Lettuce
  • 2 Carrots
  • ½ Cucumber
  • A handful of Thai Basil
  • A handful of Mint
  • A handful of Dill
  • 2 tbsp Rice Vinegar
  • 2 tsp Sesame Oil
  • 1 tsp Soy Sauce
  • ¼ cup salted Cashews

Steps (5 steps, 20 minutes)

    Bring a pan of water to the boil and cook the glass noodles for a few minutes. Drain and run under cold water until the noodles are cold and place to the side.

    Chop all of the vegetables and herbs and place in a bowl. Place the noodles on top.

    Whisk together the rice vinegar, sesame oil, soy sauce, and stir in the chopped herbs.

    Crush the cashews with a mortar and pestle.

    Pour the dressing over the salad, squeeze the juice from half of the lime on top and sprinkle with the crushed cashews. Chop the remaining lime in half again and serve!
