Vegan chocolate & gingerbread mousse pine cones!

I made these pine cones as dessert for Christmas. The mousse uses chickpea juice to keep it vegan, combined with vegan dark chocolate, dried fruit and gingerbread for all the flavours of the festive season.

You Will Need (11 things)

  • 150 g Dark Chocolate
  • Water from one can of Chickpeas
  • 1 tsp Lemon Juice
  • 1 tbsp Light Brown Sugar
  • 150 g Gingerbread biscuits
  • 2 tsp Ground Ginger
  • 2 tsp Cinnamon
  • 1 Tsbp Brandy
  • 150 g Dried Fruit
  • 150 g Sliced Almonds
  • Icing Sugar to serve

Steps (12 steps, 60 minutes)

    Break the dark chocolate into a microwave safe bowl and melt and allow to cool to room temperature.

    Pour the water from a can of chickpeas into your mixer and add 1 tsp of lemon juice. Whisk until light and fluffy - similar to the consistency of a meringue.

    Whisk in the light brown sugar.

    Fold in the melted chocolate.

    Place the gingerbread into a bowl and crush into a fine crumb.

    Mix in the chocolate mousse.

    Mix in the ginger and cinnamon.

    Add the brandy.

    Finally, stir in the dried fruit.

    Roll the mixture into 8 cone shaped balls and place on a tray.

    Decorate each ball with sliced almonds to resemble pine cones.

    Place in the fridge to set and dust with icing sugar to serve for a magical snowy look.
