I decided to make these for me and my family :D I forgot to take pics but they turned out pretty darn similar lol. Hope its an alright how-to. All comments welcome :) Thx! P.S The 10min is for fan assisted ovens and is only the baking time. Preparation is15min and cooling 30min-1hour. Have fun!

Instructions

  1. Small 18495

    Tip the dry ingredients into a large bowl.

    Heat the honey and butter in a pan over a low heat until the butter melts.

  3. Small 18497

    Then pour into the flour mixture along with the lemon zest.

    Mix well until the dough is combined and fairly solid. Cover and leave to cool.

    Heat oven to 180C/fan160C/gas 4.

    Using your hands, roll dough into about 30 balls, each 3cm wide, then flatten each one slightly into a disk. (kinda like this pic but your dough should be a different colour.)

    Bake for 10mins, then cool on a wire rack. No, not that cat, the dough!!! lol sorry couldn't resist :D

    Divide the biscuits between two baking trays lined with baking parchment, leaving room for them to expand. (Same as above: your should be a different colour than in pic.)

    To ice the biscuits, mix together the icing sugar, egg white and 1-2 tbsp water to form a smooth, runny icing.

    Dip the top of each biscuit in the icing and spread with the back of a knife.

    Alternatively you can melt some chocolate and cover the top of them in chocolate instead. Both taste equally nice:D
