Recently I decided to try an ingredient I'd never used before. Scapes are the long green steps from garlic bulbs with a fresh and rich garlicy flavour all of their own. These croutons were super tasty. Add them to soups or salads if you can resist eating them as a snack.

Description

Recently I decided to try an ingredient I'd never used before. Scapes are the long green steps from garlic bulbs with a fresh and rich garlicy flavour all of their own. These croutons were super tasty. Add them to soups or salads if you can resist eating them as a snack.

Instructions

  1. Firstly, preheat your oven to 200 degrees Celcius.

    Next, prepare the bread. I used three medium slices of plain white bread - some recipes call for slightly stale bread, but it doesn't matter too much. I cut mine into rough cubes. It's up to you whether you want to cut the crusts off first or not. The thing about croutons is that they don't have to be particularly neat or precise. Set aside.

    Take two long scape stems, cut off the very ends, and wash.

    Chop the scapes finely.

    In a saucepan over a low heat, melt 50g of butter.

    Add HALF the chopped scapes to the melted butter, and leave it on the lowest heat for another couple of minutes.

    Next, spread the bread out on a baking tray covered in baking parchment, trying not to overlap. Pour over the melted butter and a sprinkling of salt and toss the bread in it, aiming for an even coverage.

    Bake the croutons for around 7-10 minutes, then take them out and carefully turn them over. At this stage, sprinkle over the rest of the chopped scapes. If any areas of the croutons have missed out on the butter, you may wish to add a little drizzle of olive oil.

  9. Bake for another 5-10 minutes, or until golden brown.

    When ready, allow to cool on the baking tray, and then use as desired. Enjoy!
