Fruity Chicken With Wild Rice

This is another of my put together meals that shows when supplies were low you can create delicious meals!

Now on the family favorites list.

You can use any vegetables & /or meat you have. Try adding nuts or seeds. you can also use pineapple or mango.

You Will Need (10 things)

  • Extra Virgin Olive Oil
  • 3 tbsp Extra Virgin Olive Oil or sunflower
  • 3 Chicken Breast
  • quarter Chilli Flakes
  • quarter tsp Ginger
  • 2 Apple eating/dessert
  • 1 Red Pepper
  • 1 tbsp Sultanas
  • 4 Carrot(s)
  • quarter of a whole Cucumber

Steps (8 steps, 25 minutes)

    If you are serving with Wild rice like I am, follow the packet instuctions (normally simmers for 20 mins).
    Once your rice is in the pan follow the steps below to ensure your fruity chicken is ready to serve at the same time.

    Heat oil in your frying pan.
    Cut your chicken breasts into bite sized pieces and add to the pan.

    Cook,turning occassionally until browned on all sides, approx 10 mins.

    Sprinkle the chilli flakes over your cooked chicken and mix well.

    Cook for 1-2 mins.

    Cut up your carrots into sticks.

    Add carrot sticks to the pan then sprinkle over the ginger, stir well and cook for 2-3 mins.

    sice the pepper into strips, cut the cucumber into short lengths.
    Core and cut the apples into quarters and them slice into 3-4 pieces.

    Add all to the pan and mix well.

    Add in sultanas and mix well.

    Put your rice ito pasta bowls on plates.

    Spoon your fruity chicken mixture ontop and serve.
