i´ve found the recipe in the sainsbury magazine, issue june 2011. instead of the pistachios, i used cashew nuts.

You will need

Parsley Mint leaves 1 zest and juice Orange(s) 100 g Pistachios 400 ml vegetable or chicken Stock 125 g Dried Apricot s 250 g Couscous

Instructions

1. pour the hot stock over the couscous and the roughly chopped apricots, cover and leave for 15minutes.

2. fluff up with a fork, season and stir in the remaining ingredients.
