i´ve found the recipe in the sainsbury magazine, issue june 2011. instead of the pistachios, i used cashew nuts.

You Will Need (7 things)
- Parsley
- Mint leaves
- 1 zest and juice Orange(s)
- 100 g Pistachios
- 400 ml vegetable or chicken Stock
- 125 g Dried Apricot s
- 250 g Couscous
Steps (2 steps, 30 minutes)

pour the hot stock over the couscous and the roughly chopped apricots, cover and leave for 15minutes.

fluff up with a fork, season and stir in the remaining ingredients.
