Cook some Creamy Mac And Cheese Sauce with Fresh Thymes Eatery, Boulder
This vegan cream sauce is a delicious replacement for traditional dairy based sauces. It can be used with any type of noodles – raw zucchini noodles, kelp noodles or traditional noodles. The sauce makes more than you need and keeps for up to a week refrigerated.

  • Step 1

    In a sauté pan, add the olive oil, onion and garlic. Saute just until translucent. Remove from heat and allow it to cool.

  • Step 2

    Meanwhile, add the remaining ingredients to a Vita Mix or other high-speed blender, then add the cooled onion and garlic.

  • Step 3

    Turn blender on, gradually increasing speed to high. Blend on high for 3 minutes, or until the sauce is creamy and no bits of nuts remain. Taste for seasoning.

  • Step 4

    Place the amount of sauce you would like in a saucepan and warm, adding noodles as desired. Season with salt and pepper to taste and enjoy.
