Inspired by Starbucks
These cookies were inspired by my husband mixing different drinks from Starbucks, which gave to me the name Frankensteins for the cookies.
I wanted a vanilla cookie with a hint of coffee mixed in and covered in a mint chocolate. I used the same recipe as the Mint Thins, but added some more vanilla, and instead of cocoa powder I used instant coffee. I used less, and added more flour to make the difference for the cocoa powder.
