Perfect to serve at the end of a homemade Chinese dinner – or great fun at parties – these cookies take a little bit of patience to get the messages sealed inside, but are well worth persevering with. They might even bring you a little good luck.

You Will Need (7 things)

  • 50 g Butter
  • 50 g Confectioners Sugar
  • 1 Egg White
  • ½ tsp Sesame Oil
  • 40 g All Purpose Flour
  • 2 Baking sheets lined with Baking Parchment
  • Small pieces of paper with various ‘ Fortunes ’ written on them

Steps (7 steps, 25 minutes)

    Preheat the oven to 180°C (350°F) Gas 4.

    Beat the butter and sugar together in a large mixing bowl until smooth and light.

    Beat in the egg white and sesame oil until fully incorporated. Add the flour and stir until everything is well combined.

    Spread small circles of the mixture onto the prepared baking sheets and bake in the preheated for about 6 minutes, until very light golden and firm.

    Remove the cookies from the oven and let them firm up for a minute.

    With a narrow metal spatula or palette knife, carefully lift each cookie from the baking sheet, pop the folded fortune in the centre and immediately fold the cookie in half, pinching the edges together. Pull the cookie around to make the traditional fortune cookie shape and leave to cool. If the cookies harden too much to shape, simply return to the oven for a minute or so to soften, cool a little and try again.

    Store in an airtight container or cookie jar and eat within 2 days.
