Nice fresh Focaccia bread.
Heat oil, garlic & herbs together on a low heat to infuse.
Set aside to cool.
In a bowl combine the water, yeast & honey.
Leave to bloom.
Add 1 cup flour & 1/4 cup of oil to the yeast mixture.
Stir 3 or 4 times & leave for 5 mins.
Stir in the remaining 1 1/2 cup of flour & salt.
Kneed the dough for 5-10 time until smooth.
Place into an oiled bowl & cover for 1 hr until risen.
Heat oven 450/230 degrees.
Oil a tray, place the dough onto the tray & press it out.
Make dimples in the dough.
Pour the remaining oil over the dough.
Leave to rise for another 20 mins.
Bake for 15-20 mins until golden.
Leave to cool.
Cut & serve.
