Fizzy and fruit, a Tom Collins is a classic cocktail which mixed up perfectly with Edinburgh Gin's elderflower liqueur and the seeds of a passionfruit.
Cut a slice of passionfruit and place to the side. Scrape the remaining seeds from the fruit into the bottom of a tall glass.
Add the elderflower gin.
Squeeze in the juice from half a lime.
Fill with ice and top with soda water.
Mix with a straw, add the passionfruit slice and serve!
