great way to use up rice
This recipe serves around 4-5 people.

  • Step 1

    heat the oil in a wok or frying pan until smoking hot. Add the rice then stir for a couple of minutes until the rice is evenly coated with oil.

  • Step 2

    next add the eggs and stir frequently until they are absorbed into the rice. continue to stir for a few more minutes until the rice begins to caramelise and toast.

  • Step 3

    Next throw over the spring onions, stir then serve immediately.
