healthy breakfast:egg casserole with mushrooms
Eggs and mushrooms... mmmmmm.. two of my favourite ingredients come together:) combined with garlic powder.. heavenly!

  • Step 1

    • Beat the eggs in a bowl till creamy. Add salt and garlic powder to it. beat some more.

  • Step 2

    • Add some salt to all the vegetables and toss to mix well. Microwave this for 1min

  • Step 3

    • Mix the lightly steamed vegetables with the beaten eggs.

  • Step 4

    • Grease the dish with butter/olive oil.

    My dish is a 3"1, 750 ml. so the three eggs fit in comfortably. If you're going to use more eggs make sure to use a bigger dish

    • Pour the egg vegetable mixture into the dish. sprinkle the top with generous amounts of dried basil.

    • Microwave for 5-6 min or till the eggs get a golden brown colour.
