It is a very versatile cake where you can add anything you want. Assorted nuts means anything and everything you have in your hand. You can add and remove nuts per your preference.

Description

It is a very versatile cake where you can add anything you want. Assorted nuts means anything and everything you have in your hand. You can add and remove nuts per your preference.

Instructions

  1. Preheat oven to 300 Degree F (150 degree C) and grease 9 inch loaf pan. Line the pan with parchment paper on all sides.

  2. In a bowl whisk flour, baking powder, baking soda, salt and Sugar. Add chopped dried fruits and nuts and mix with hands making sure every thing is coated in flour. I used : Roasted Almonds, Pepper & Masala Coated Cashew, Jaggery Coated Almonds, Walnuts, Cinnamon Chashew

  3. In another bowl whisk together Eggs and Vanilla until creamy and thick. It should take around 10 - 12 minutes beating at normal speed.

  4. Gently add egg batter to flour and nuts mixture. Mix until everything is wet and coated with egg batter.

  5. Scrape the batter into the loaf pan.

  6. Bake for about 60 - 65 minutes or until brown. Let it stand for 10 mins on wire rack to cool before slicing.

  7. Cut with a very sharp knife and serve.
