As far as classic arcade gaming of the 80s goes, you can't go wrong with Mario's first starring role in "Donkey Kong". I figured that the mischievous ape would make a nice sprite art figure, so I sat down for about an hour, armed with some hama beads and built him. I like classic 80s sprites as they're simple yet really iconic and recognizable (besides that they remind me of the good old childhood days ;) ). Donkey Kong was quite easy to build (you only need 4 colours) and is a real eye catcher, especially when paired with one of those mini arcade-cabinets made out of cardboard. :)
