I recently bought the buttermilk Fiber One Complete Pancake Mix. It's one of those mixes that you only have to add water. My husband had commented they had turned out dry the first time we made them. This morning I decided to add applesauce and mashed bananas to add flavor and moisture. They turned out delicious. For extra nutrition I added chopped walnuts.

Instructions

    Follow the instruction in the box. The amounts that I have specified are for making 4 large pancakes using only 1 cup of the dry mix. After mixing the dry mix, incorporate the mashed banana, applesauce and the nuts. Make sure you just mix slightly so your pancakes will turn fluffy.

  2. Heat a non stick pan and add some oil. Cook on the hot pan, turning only once. Cook on the other side. You will know it's time to turn your pancakes when you see a several dimples on the surface. I usually add oil to the pan as I cook each pancake. Enjoy!
