This traditional summer salad is great for a quick and healthy lunch. Feel free to substitute black beans for the garbanzo beans and sunflower seeds for the pine nuts.

You Will Need (10 things)
- 2 Medium hothouse Cucumbers , cubed
- 3 Whole Green Onions , chopped
- 1 (15-ounce) can Garbanzo Beans , or 1 1⁄2 cups home-cooked garbanzo beans
- 3 tbsp Fresh Lemon Juice (about 1 1⁄2 small lemons)
- 2 tbsp Chopped fresh Parsley
- Sea Salt
- Black Pepper
- ½ cup Crumbled Feta Cheese
- ½ cup Pine Nuts
- ¼ cup Extra Virgin Olive Oil

Gently mix all the ingredients together in a large bowl, seasoning with sea salt and black pepper to taste. Divide the salad among four small bowls (or mason jars). Feel free to garnish with extra olive oil and add more sea salt and black pepper to taste, if desired.
